Whether it’s become quite cold outside and you need something hot to fill your tummy with or just want a fix for some comfort food goodness, these soups and stews will be on your table within 15-45 minutes using staple ingredients that you find in your kitchen. These are some of life’s best forms of simple pleasure in a bowl.

Easy Chicken Soup with Tortillas
Done in 20 minutes and makes four servings.
Ingredients:
3 cups cooked chicken, shredded
½ cup sour cream
1 12oz jar salsa verde
3 cups chicken broth
2 green onions, chopped
1 15oz can cannellini beans, drained
1 tsp ground cumin
Tortilla chips
Procedure:
Open the jar of salsa and pour into a saucepan. Let the salsa cook for around two minutes in medium heat. After which, add the chicken broth, chicken pieces and cumin. Let this mixture to boil then let lower heat and let simmer for 10 minutes with occasional stirring.
Pour into separate bowls and top each with a sprinkling of onions and a spoonful of sour cream. Add some tortilla chips, serve and enjoy.

Red Potato and Chicken Chowder
Done in 35 minutes and makes four servings.
Ingredients:
1 lb. red potatoes, sliced into ¼-inch thick
3 pcs bacon, cut into ½-inch pieces
3 ½ cups chicken broth
10 oz skinless rotisserie chicken meat
1 medium onion, chopped
¼ tsp dried thyme
2 stalks celery, diced into ¼-inch long
1 cup corn kernel
1 cup light cream
1 small tomato, seeded and diced
Ground black pepper
Procedure:
Fry bacon on a pan until they turn brown and crispy. Once all done, transfer bacon to a plate covered with paper towels and let drain. Cook onions and celery in the bacon drippings in the same pan. Cook for around 8 minutes or until onions and celery turn brown.
Add the broth and potatoes to cooked onion and celery. Sprinkle with dried thyme and pepper. Bring the mixture to a boil then let simmer in low heat until potatoes become tender. Bring the mixture to high heat once again and add chicken, tomatoes and corn. Cover the pan, reduce heat and let simmer for 5 minutes. Add the light cream and stir.
Serve into four separate bowls and sprinkle bacon on top.

Cheesy Potato Soup
Done in 30 minutes and makes four servings.
Ingredients:
½ cup shredded cheddar cheese
1 lb red potato, chopped
1 tbsp butter
2 ½ tbsp all-purpose flour
1 ¼ cup low fat milk
2 tbsp green onion, chopped
1 cup onion, chopped
¾ cup chicken broth
1/8 tsp ground pepper
1 cup water
Procedure:
Place a saucepan in medium heat then place butter. Let butter melt and sauté onions. When onions are tender, add all-purpose flour while constantly stirring. Add water, broth and potatoes to the saucepan and bring them to a boil. Reduce heat and let simmer for 10 minutes. Place the shredded cheese and ground pepper and cover for 2 minutes or until cheese becomes melted. Transfer to individual bowls and top each with chopped green onions.
