The New Year heralds new beginnings. If you’re quite the kitchen buff but is running out of new recipes to serve to family and friends, we’ve rounded some new delectable dishes – from the main course, dips to pastas — that will star and rock your dining table this year.

Cheese-Studded Mac and Cheese

Ingredients:

1 cup shredded white cheddar cheese

¾ cup shredded Pecorino cheese

2 slices finely chopped American cheese

1 cup shredded Gruyere cheese

2 ounces chunked Camembert Cheese

8 ounces elbow pasta

2 cups whole milk

3 tbsp all-purpose flour

¼ cup unsalted butter

¼ tsp cayenne powder

¼ cup bread crumbs

¼ tsp paprika

Salt

Black pepper

 Procedure:

Pre-heat an oven rack at the oven’s top half. Meanwhile, boil salted water in a large pot. Pour the pack of macaroni into boiling water and let cook for five minutes. Remove the pot from fire just before macaroni turns al dente. Strain and set the macaroni aside. Take out a cast iron skillet and place over medium heat and heat butter until it melts. Sprinkle all-purpose flour and whisk until the mixture becomes paste-like in consistency. Whisk the mixture until it becomes golden brown, then slowly pour the milk over. Whisk vigorously for around 8 minutes, making sure there are clumps within the mixture. Continue mixing until the mixture resembles a heavy-cream mixture and add in the paprika and cayenne pepper. Season the sauce with salt and pepper to taste. Mix ¼ cup of mixed pecorino, cheddar and gruyere cheese and set aside. Slowly add the remaining cheese into the mixture, whisk and make sure that there are no clumps. Continue mixing in low heat until all cheeses are melted. Coat the macaroni with cheese and fold properly. Sprinkle the macaroni with the cheese you’ve set aside previously, followed by bread crumbs. Broil the skillet of mac and cheese for 5 minutes or until the cheese turns golden brown. Serve while hot.

Mini Sweet Potato Pizzas

Ingredients:

Sweet potato, peeled into ribbons (use an ordinary vegetable peeler to achieve this)

Pizza crust or 4 pcs naan bread

½ clove garlic

Chopped kale

red onion, shaved

brussel sprouts, shaved

pecorino cheese, grated

ricotta cheese

red chile flakes

olive oil

Procedure:

First, pre-heat your oven to 325 degrees. In a wide plate, sprinkle the sweet potato ribbons with salt and a drizzle of olive oil. Take a pizza crust or naan bread and scrub the surface with sliced garlic. Sprinkle the surface of the crust or bread with some ricotta cheese then top with sliced onions, kale, Brussels sprouts and a few ribbons of sweet potato. Top the whole crust with grated pecorino cheese. Do the same for the rest of the crusts or breads. Place them in the pre-heated oven and bake for 20-25 minutes or until the sweet potatoes have been cooked through. Serve with as main dish or appetizer along with your preferred refreshments.
